A new snack, Lava Cheese is becoming extremely popular in Iceland. It’s a concept created by two friends who loved the taste of melted, hardened cheese.
Lawyer Guðmundur Páll Líndal and engineer Jósep Birgir Þórhallsson, who are presented the new snack at the food market in Harpa last autumn and now it’s available in many Reykjavik deli’s and gourmet shops. “We’re always trying out new things regarding food and at one point we were talking about the best cheese being the one that melts off a grilled sandwich and then hardens,” says Líndal. “So we started trying to make a snack that would capture that flavour and found a recipe that people really like.”
Lava cheese is a crunchy cheese snack made from Icelandic cheddar, which is then dried, baked and seasoned. “Our first range is made with chili and is fairly spicy, but we’ll be bringing out other flavours.”
